Cherry jam with agar-agar

Jam is a very popular sweetness, which is better than jam in many ways. With jam, you get better quality baked goods, it spreads more easily on bread and wraps well in pancakes. The process of making jam with agar-agar is even easier than with gelatin, the main thing is to keep the proportions. Try it!

First, collect fresh cherries and remove the seeds from them. Sort out the berries, remove the stalks, twigs, leaves, spoiled fruits. You can safely make jam from the prepared berries.

Pour granulated sugar into a bowl with berries and stir, leave the berries to infuse overnight under gauze. The berries will start up the juice, and the sugar will dissolve. Then grind the mixture of granulated sugar and cherries until puree with a blender.

Put a bowl of berries on the fire and, after boiling the jam, cook it for five minutes after boiling. Be sure to remove the foam with a spatula. Combine agar-agar with sugar in a one-to-one ratio and add to a saucepan. Simmer until the jam thickens. It will not be as dense as when it has cooled down, so just thicken the mixture a little.
