We take the butter out of the refrigerator 2 hours before cooking and leave it at room temperature. Put the softened butter in a deep bowl and beat with sugar using a mixer until a white airy mass.

Add the egg and beat again at high mixer speed for 2-3 minutes.

We switch the mixer to medium speed and add kefir in a trickle. As a result, we get a dough with a consistency that resembles liquid sour cream.

Sift flour, baking powder and vanillin into the dough, mix everything well with a mixer until smooth.

Using a knife or blender, chop the chocolate into pieces. We wash the mint under running water, separate the leaves from the stem and chop them finely. Add mint and chocolate to the dough. Mix everything well with a spoon or spatula.

We spread the resulting mass in a silicone mold. If the tins are metal, grease them with butter or insert paper cupcake inserts. We fill the molds by 2/3 - the cupcakes will still rise during the baking process. We put the muffins in the oven and bake at 180 degrees for 20-25 minutes.
