Sweet cherry jam

Berry confiture is an excellent berry preserving option that serves as a great alternative to jam and preserves. During the cooking process, the berries are crushed in mashed potatoes, so the confiture has a thick consistency, which is very convenient for using the confiture as a filling in baked goods. Today we will prepare a sweet cherry confiture with the addition of apple and lemon juice, which will successfully emphasize the taste of the sweet cherry and add the missing notes of sourness to it.

To prepare the jam, select ripe sweet cherries. We put it in a colander, rinse it, leave it for 5-10 minutes to glass the water. Then we remove the stalks and take out the seeds. Put the finished cherries in a bowl. Squeeze the juice from the lemon and add to the berries, add sugar to the cherries. Put the bowl with berries on low heat and bring to a boil, not forgetting to stir the berry mass so that the sugar dissolves. After the berries have boiled, remove the resulting foam and continue to cook for 10 minutes. Then remove the jam from the heat.

We wash the apple, peel and core and cut into small cubes. From the slightly cooled berry mass, using a slotted spoon, take out the berries into a separate container, and put the syrup on a slow fire. Bring it to a boil, add the chopped apple and cook until the syrup volume is halved. Do not forget to stir the syrup so that it does not burn to the bottom.

After we have boiled the syrup, add the berries to it, boil for 1-2 minutes and remove from heat. We leave the berry mass for 10-15 minutes so that it cools down a little. Then grind the berries into a puree mass using an immersion blender.

Put the chopped berry puree on low heat again, bring to a boil and cook for 10 minutes. During this time, we rinse and sterilize the cans, boil the lids.

Remove the finished hot confiture from the heat and lay it out on previously prepared jars, close tightly with lids and leave to cool completely, covering the jars with a terry towel.

We left some of the jam for tasting. After cooling completely, it acquires a thick consistency and amazing taste!
