Kvass from chicory and citric acid

We offer you another version of the summer drink - kvass with the addition of chicory. The main ingredients for its preparation - chicory, yeast, sugar and citric acid - are a set of those products that help chicory to reveal its taste. Kvass turns out to be moderately sweet, full-bodied with light coffee notes.

For the preparation of kvass, we take instant chicory. Its granules dissolve quickly and give the drink all its aroma.

We put chicory, citric acid, yeast and sugar in a large container in which kvass will be infused, it is best if it is a glass bottle. If not, then you can use a large saucepan. Add half of the specified norm of warm, but not hot water to the dry ingredients. Mix all the ingredients well and add the other half of the water. We put the container with kvass in a warm place, where the ambient temperature is at least 22-24 degrees (it can be a windowsill, a balcony on the sunny side) and leave it for 3-4 hours.

In the warmth, the yeast, interacting with sugar, will begin the fermentation process, and a dense foam cap will form on the surface of the liquid. Three hours later, when the fermentation process takes place, it will dissolve and the kvass will be completely ready.

Pour the finished kvass into a jug and put it in the refrigerator for 1-2 hours so that it cools well. After that we serve the finished drink on the table.
