Chicory kvass with raisins

This delicious and refreshing drink can be made with chicory in a matter of hours. In its taste, it is similar to the Soviet barrel kvass, only without the hints of bread and persistent foam. In this recipe, you are invited to add fresh lemon, mint and raisins to kvass to make the drink carbonated and with a pleasant sourness. Cooking from ordinary instant chicory without aromatic additives.

Place the amount of chicory and sugar in a large saucepan as indicated in the recipe.

Pour 3 liters of clean water to them, mix everything, boil and leave for 1 hour to cool. If possible, take spring water.

Rinse the lemon thoroughly with a brush and cut it into pieces. Place the lemon in a gauze pad. Add mint to the lemon. Tie a napkin with a bag and place it in the cooling dissolved chicory.

Pour the mute cooled solution into a bowl and dissolve dry yeast in it. Then pour the yeast into a saucepan to the kvass.

Remove the bag with lemon slices from the kvass, squeezing its contents well.

Put raisins in kvass. It is undesirable to rinse the raisins, because wild yeast is on its peel, which will make the drink more carbonated.

Cover the pot with kvass with a towel and leave for 4-5 hours in a warm place to ferment the drink. Then pour the finished kvass into clean bottles, without filling them to the very top. Chill bottles with chicory kvass with raisins in the refrigerator and can serve.
