Spicy green tomatoes in Korean for the winter

Korean-style green tomatoes are a quick way to harvest green tomatoes for the winter with lots of greens and a variety of vegetables. Vegetables are marinated in their own juice, after which they are seasoned with spices, vinegar and vegetable oil. During the cooking process, vegetables are not heat-treated, so they should only be stored in the refrigerator.

We wash green and brown tomatoes under running water and put on a kitchen towel and leave for 20-25 minutes so that they dry a little from the water. Then cut the tomatoes in half, remove the stalks and cut the tomatoes into 4 pieces. Place in a deep bowl and add a tablespoon of salt. Mix the tomatoes well and leave for 2-2.5 hours so that they let the juice go, which will then need to be drained.

After the time has elapsed, drain the juice and add finely chopped greens to the tomatoes, grated carrots, chopped into thin strips of Bulgarian and hot peppers, chopped garlic. Then add vegetable oil and vinegar to the vegetables. Mix all vegetables thoroughly.

We wash the jars for twists with baking soda, rinse thoroughly with water and place them in a cold oven on the grate with the neck down. We sterilize the cans at a temperature of 110-120 degrees for 8-10 minutes. We remove the hot jars from the oven and let them cool for 10-15 minutes. Then we put the vegetables in the jars, tamp them a little with a spoon, and pour the marinade remaining in the bowl.

We close the jars tightly with nylon lids and send them for storage in the refrigerator. Tomatoes will be ready after a week, and they can be stored in the refrigerator for a long time.
