Black cherry jam

Jam made from this juicy and aromatic berry will be similar in texture to jam. It is very suitable as a filling for homemade baked goods. We do not take out the seeds from the cherries.

Sort out black cherries and rinse with cold water. Then remove all the stalks. Place the cherries in a separate bowl, scald with boiling water and pat dry with a kitchen towel.

Pour water into a saucepan for boiling jam, add the amount of sugar indicated in the recipe and place the saucepan over low heat. Stir the water and sugar to dissolve the sugar completely, and bring the syrup to a boil. Transfer the prepared berries to the boiling syrup. Cook the cherries in the sugar syrup for 10-15 minutes from the start of the boil. When cooking, there will be a lot of foam on the surface of the jam. You don't have to crumple it. Then turn off the fire.

From the saucepan, pour half of the syrup into another bowl. Cook the cherries in the remaining syrup until the consistency you want. Black cherry jam becomes very sweet when cooked. Therefore, at this stage of cooking, add lemon juice to it. For a rich flavor, add cinnamon or vanilla to the jam. During the second cooking, the foam will disappear, and the berries will become transparent and sink to the bottom of the dish.

Check the jam for readiness. To do this, pour a little jam on a plate and make a groove on it with a knife. The groove does not float in the finished jam. Pour hot black cherry jam into sterile jars and immediately seal tightly. Such jam is well stored at home, but only in a dark place.
