Fried zucchini for the winter

Only young zucchini are suitable for this harvest, since they have not yet formed seeds, and the flesh is completely tender and almost uniform. It is very convenient to have several jars of such preservation, because at the right time you just need to open the lid and put the contents on a plate - and the snack is ready to serve.

We wash and dry the zucchini thoroughly. Cut them into circles five to seven millimeters thick.

Place the zucchini mugs in layers in a deep bowl, sprinkle with salt. We leave it for two to three hours for the vegetables to start juice. Then we drain the juice, but do not rinse the zucchini from salt.

Fry the zucchini in a pan, adding vegetable oil as needed. We achieve a golden brown crust on both sides of each mug.

Fold the fried circles on a plate and let cool.

We wash the parsley, dry it and chop it with a knife.

Peel the garlic and pass it through a press.

Put a pinch of chopped parsley in prepared dry clean jars (ideally take 500 ml jars), pour half a teaspoon of vinegar into each jar.

We put the fried zucchini slices in jars, sandwiching with the remaining chopped parsley and chopped garlic.

We put the zucchini tightly enough. Fill the free space in the jars with vegetable oil.

We roll up the jars with lids and let them cool completely. We put it in a cool and dark storage place.
