Pre-sort, remove the defective fruits, wash and leave them for 1 hour in cold water. The tails are quickly cut off the berries on both sides using kitchen scissors. According to various recipes, gooseberry seeds are harvested by making small cuts or peeling them off. Some chefs prefer to keep the berries intact to make the finished product look more presentable.

In all cycles, the cooking time is 5 minutes. At the end, vanilla sugar is added and, while hot, the dessert is poured into the jars, closed.

Gooseberry jam with the addition of orange and lemon turns out to be no less tasty and aromatic. The dessert takes on a delicate amber hue, saturated with citrus aromas. In advance, the orange and lemon are divided into small slices, the seeds are removed. The cooking process takes place in 3 stages. Prepared citruses, sugar, water are added to the processed gooseberries and put on low heat. Bring the mass to a boil, cook for 5 minutes. After several hours, the procedure is repeated. At the last stage, the dessert is boiled for 10 minutes and poured into containers hot.
