Banana muffins in the microwave

This is a rather unusual way of making muffins, but it also has a place to be. We knead the dough, lay it out in tins and put it in the microwave, and after two or three minutes we serve hot, wet muffins on the table. They are perfect for breakfast with coffee or tea - cooking does not take much time, and the cupcakes themselves turn out to be very nutritious. You can decorate and supplement such muffins by pouring them with jam, condensed milk or honey.

Put peeled bananas and an egg into a bowl. Use a fork to crush the bananas together with the egg until you get a thick, puree-like mass. There is no need to achieve complete uniformity: the remaining small pieces of banana will add texture to the finished muffins.

Put sour cream in the egg-banana mixture and mix everything together. We do not add sugar to the dough, since the sweetness from bananas will be enough. However, if you want more sweets, you can add an additional one or two tablespoons of granulated sugar.

Mix the prepared liquid mass with flour, cinnamon and baking powder. You do not need to knead thoroughly - you just need to break the flour lumps.

Muffin dishes must be microwave-safe. You can use silicone, ceramic, glass molds or just small cups. Lightly grease the selected molds with vegetable oil and put the prepared dough in them.

We put the forms with the dough in the microwave for two to three minutes at maximum power. The finished muffins should increase slightly in volume, small holes will appear on their surface. There will be no ruddy crust with this baking method. We take out the finished muffins from the microwave and turn them over from the molds onto a plate. Let them cool slightly and serve.
