In cooking, as well as in art, adding an extra ingredient can change the taste exactly the opposite. The same is in the preparation of assorted compote. By combining currant and gooseberry berries of different colors and in different proportions, you can change the taste and color of the drink. Red currants go well with dark gooseberries, black with green ones, and white currants with yellow gooseberries will make a compote of a beautiful light color. Such a compote is prepared without sterilization and by the method of 2-fold filling.

First sort the currants and gooseberries in the chosen color. Separate the currants from the twigs. Remove the tails from the gooseberry with small scissors. Then rinse the berries well and discard in a colander so that the excess liquid is glass.

Rinse compote jars well in advance with the addition of baking soda and then scald with boiling water or sterilize over hot steam. Boil the lid for a couple of minutes. Pour a clean berry into a sterile jar and pour boiling water over it for 5 minutes. Cover the jar with a lid.

After 5 minutes, drain the water from the jar through a special lid into the pan. Then pour the required amount of sugar into the water, dissolve it and boil the syrup for 5 minutes.

Pour the currants and gooseberries in a jar with boiling syrup, filling it to the very top so that no air remains. Immediately close the jar tightly with a lid and check the tightness of the sealing.

Then put the jar on the lid and wrap it up with any "fur coat" for one day. Red currant and gooseberry compote is ready. It will keep well in a cool, dark place and even at home temperature throughout the year.
