Rye kvass with horseradish

Kvass with horseradish quenches thirst well and warms up the appetite. It is good not only as a drink, but is also ideal as a base for okroshka and fridge. It is very easy to prepare such kvass even at home.

Prepare all the ingredients you need. You can take crackers ready-made or cook them from rye bread yourself in the oven.

Pour crackers with boiling water and leave for 2 hours. Then strain the liquid through double-folded gauze. The liquid temperature should be equal to 33-35 degrees. Add sugar and yeast, stir well. The next stage of fermentation will take at least 6 hours, it depends on the temperature of the room, in a warm place the process will go faster.

Grate horseradish on a fine grater. When foam begins to collect on the surface of the kvass, add horseradish and honey, leave for another couple of hours.

Strain the kvass again through cheesecloth, bottle it and refrigerate it for storage. Serve chilled kvass.
