Apricot jam with walnuts for the winter

Nuts are placed inside apricots and everything is cooked in sugar syrup with citric acid in two steps. Ready jam is poured into jars and tightly closed with a lid.

Rinse the apricots thoroughly under cool running water. We throw it back in a colander and wait until all the water drains.

We take a toothpick and insert it into the place of attachment of the stalk. Gently turn it around the bone to separate the pulp.

Now insert the toothpick from the back and push out the bone. We do this with all the apricots.

In each of the fruits we put half a peeled walnut.

Pour granulated sugar into a deep saucepan, fill it with drinking water and put on a small fire. Stir occasionally until the sugar is completely dissolved.

Add citric acid and mix again.

We send apricots with walnuts to sugar syrup. Bring to a boil and cook over low heat for 7-10 minutes. We remove the resulting foam so that the jam is of a beautiful amber color. It is important not to stir anything to keep the apricots intact. Instead, we just shake the pan slightly. Next, remove from heat and leave for at least 8 hours to cool everything completely. The next day we repeat this step one more time.

The jars are thoroughly washed and sterilized in a suitable way. Pour hot jam into them and close tightly with lids. Let it cool completely, after which we send it to a cool dry place for storage. We use it to prepare a variety of pastries or use it neat with tea. Bon Appetit!
