Strawberry and black currant compote for the winter

A simple way to preserve berries with a drink for a long time, so that you can enjoy homemade compote at any time.

Before you start preparing compote, be sure to sterilize the dishes in which you will roll it up. There are a huge number of ways to do this, choose the most convenient for you. Then, while the dishes are cooling and drying, prepare the berries. Go through the strawberries, trying to leave only whole and strong berries, tear off the sepals and rinse the fruits under running water. Leave them to dry in a colander or towel.

Do the same with currants. Since this berry is more fragile, it is better to rinse it not in a colander, but in a bowl of water, gently stirring the berries with your hand. So all the debris will float to the surface and it will be easy to remove it, and the berries will remain intact.

Distribute the washed currants on the banks at the rate of 100 grams per container volume 1.5-2 liters.

Add about 150 grams of strawberries on top. You can vary the ratio depending on what flavor you want to dominate in the compote. Just keep in mind that currants initially have much richer juice than strawberries.

Boil water and pour into jars. Cover with lids and leave to infuse for 10-15 minutes.

After the specified time, pour the liquid from the cans into a saucepan, add sugar and put on fire. Stirring constantly, bring the juice to a boil and cook until the sugar is completely dissolved.

Pour the resulting syrup back into the jars and close tightly with lids or roll up turnkey. Arrange the jars upside down or fold on their side, wrap them in a blanket or blanket and leave to cool completely, usually about 10-12 hours.
