Homemade watermelon rind jam

One of the quickest and easiest recipes, but the result is an amazingly tasty jam. They ate the pulp, put the crusts on jam, beauty!

We wash the watermelon, cut off the pulp and peel the crusts from the green skin, cut into cubes. You can leave a little pulp, so our jam will look brighter.

We transfer the crusts to a saucepan, fill with half of the water and cook until boiling. Then we drain the water and rinse the crusts with cold water. This is necessary so that they retain their shape and are crispy.

Add the remaining water to the crusts in the pan and add sugar. At this point, you can add cinnamon, lemon zest, or a couple of cloves, whichever you prefer. We put on low heat and cook for an hour.

The jam should thicken slightly and become amber in color. If the crusts are watery, it may take a little longer. When the crusts have become transparent, the jam is ready, you can turn off the stove.
